Red Wine Vinegar

Sometimes I have a recipe that calls for red wine vinegar and I wind up substituting something else because I don't have any and I don't want to buy it just for one recipe. However, I recently realized that I can use my leftover Shabbos wine to make my own. Cool, right?


The process is extremely easy all you need to do is pour the wine into a clean jar and secure cheesecloth or a coffee filter over the top with a rubber band. It's recommended that you start with 1/2 a bottle or more but any amount will work.

Let sit in a cool, dark place for 6 to 8 weeks, until it smells like vinegar.

Don't worry if a gooey jelly-like blob forms in your vinegar; that's what cultured the vinegar. You don't want to serve that in the food, but you can put a chunk of that into any other wine and turn it into vinegar without the long wait creating a never-ending supply. It takes only a few days for newly added wine to turn to vinegar.
